Ingredients

Batter

  • 100 g dark chocolate, (Broken in pieces)
  • 250 g Butter, (Cubed)
  • 120 g sugar
  • 5 large eggs
  • 200 g plain flour
  • 30 g baking powder

Syrup

  • 250 g sugar
  • 300 g Boiling water
  • 30 g brandy

Topping (Ganache from EDC)

  • 100 g dark choc, (Broken in pieces)
  • 80 g cream
  • Whole Hazel nuts or Almonds, (Decorating)

Recipe's preparation

    Chocolate Brandy Cake
  1. Preheat oven to 180 C.

  2. Place chocolate into TM bowl and mill for 5 seconds on speed 7.

  3. Add sugar and butter and melt together in TM bowl for 3 minutes at 70 C on speed 2.

  4. Add one egg at a time and mix for 10 seconds at speed 4 after each addition. (Keep the blades running while adding the eggs)

  5. Add flour and baking powder and mix well for 20 seconds on speed 4.

  6. Put mixture into a greased 22cm bundt baking tin.

  7. Bake in a pre-heated oven for 45 minutes

  8. Leave cake in tin and pour hot syrup over it.

  9. Let it cool down slightly while the syrup sinks in.

  10. Turn it out and let it cool down completely before you put the topping on.

  12. Place sugar, boiling water and brandy into TM bowl.

  13. Bring back to boil for 5 minutes at 100 C on speed 2.

    (It is important that the sugar is properly dissolved otherwise it will crystallize in the cake)

  14. Pour hot syrup over cake and let it cool slightly before turning it out.

  15. Topping (Ganache from EDC)
  16. Place chocolate in TM bowl and grate for 30 seconds on speed 8.

  17. Add cream and cook for 2 minutes at 50 C on speed 4.

    The consistency should be creamy.  Pour over the cake and let it run down the sides. Add hazel nuts and allow it to cool down.

Tip

It can be served just as it is with a cup of tea or coffee or with cream or ice cream for an indulgent dessert!

If you prefer, you can add an additional 30g Brandy in the batter to have a stonger brandy flavour.

Please use good quality chocolate for a greater result.

Can also be made with white chocolate and white choc ganache - Yummy!
