Ingredients
Pastry
- 100 g sugar
- 250 g Butter
- 350 g plain flour
Pie Filling
- 40 g Butter
- 3 eggs
- 250 g agave syrup, Can use maple syrup if you prefer
- 70 g Rapadura Sugar, Can use raw sugar if you prefer
- 1 tsp vanilla
- 200 g Whole Pecans
- 200 g dark chocolate bits

Grind sugar in TM Bowl for 5 seconds at speed 10
Add the Butter. 3 minutes, 50 degrees, speed 2 (or until just melted)
Add Flour. Mix at speed 6 until just clinging together.
Press into a 28cm tart tin. There will be pastry left to spare - wrap this in cling wrap and freeze for your next tart. Or make another smaller tart.
Chill the pastry for half an hour.
Bake for 10-15 minutes at 150degrees c. until just pale gold. Cool to room temperature.
Melt butter in the TM Bowl for 3-5 minutes. 60 degrees. Speed 2.
Allow Butter to cool to 37 degrees (so eggs don't cook).
Add Eggs, Agave Syrup, Sugar and Vanilla to the TM Bowl. Mix for 8 seconds. Speed 4.
Add Whole Pecans and Dark Chocolate to TM Bowl. Using
"Counter-clockwise operation" mix for 10 seconds. Speed 1
Pour Filling into prepared pastry shell.
Bake at 180 degrees c. for approximately 1 hour or until the center is just set. If it is getting too dark duing this process, cover with foil. Cool for approx 4-5 hours before serving.
