Ingredients

Cake

  • 180 g raw sugar
  • 110 g Butter
  • 2 Room Temperature Eggs
  • 3 over ripe bananas
  • 240 g plain flour
  • Pinch salt
  • 40 g Milk
  • 1 tsp Bi Carb Soda
  • 1 tsp baking powder
  • 30 g cocoa powder
  • 1 tsp Vanilla Bean Paste

Caramel Icing

  • 110 g raw sugar
  • 1 tsp cornflour
  • 20 g brown sugar
  • 25 g Butter
  • 15 g Milk

Recipe's preparation

    Make The Cake
  1. Pre-Heat Oven to 160 degrees celsius - Fan Forced.

    Grease and line a small lamington tray 18cm x 28 cm.

    Grind Sugar for 10 seconds / speed 9.

    Add to TM Bowl Butter, Eggs, and Peeled Banana's.  Mix for 10 seconds / speed 5.  Scrape down sides of bowl.

    Add to TM Bowl Flour, Salt, Milk, Bi-Carb and Baking Powder.  Mix for 15 seconds / speed 5.

    Tip half of the mixture, approximately 500g into a separate bowl.  Add the cocoa powder to the batter in the separate bowl.  Mix through thoroughly with a spoon or spatula.  Once thoroughly combined, pour cocoa batter into prepared cake tin.

    Add Vanilla Bean Paste to Mixture still in TM Bowl.  Mix for 3 seconds / speed 5.  Pour this mixture on top of the cocoa mixture.  Use a knife to randomly pull through the batters to create a rough marbled effect.

    Bake in pre-heated oven for 45 minutes or until an inserted skewer comes out clean.

    Stand cooked cake in cake tin for 5 minutes before turning out onto a wire rack to cool.

    Allow to completely cool before icing.

  2. Caramel Icing
  3. Add raw sugar and cornflour to TM Bowl.  Mill at 20 seconds / speed 9.  Transfer to a separate bowl for now.

    Add butter to TM Bowl.  Melt for 2 minutes / 60 degrees / speed 2. 

    Add Brown sugar.  Mix for 2 minutes / 80 degrees / speed 2.

    Add milk and reserved sugar/cornflour mixture.  Mix at speed 5 / 10 seconds.

    Ice your cake immediately, before the icing mixture cools.

    Cake will keep for several days in a sealed container.  Can be frozen.
