  • 160 g Almonds (or mixed nuts)
  • 400 g sweet potato, peeled and roughly chopped
  • 1 litre water, boiled
  • 85 g pitted dates
  • 40 g raw cacao powder
  • 85 g honey

Recipe's preparation

    Chocolate Sweet Potato Brownies
  1. 1. Add almonds (or other nuts) to the bowl and mill 9 secs/speed 9. Set aside.

    2. Add boiled water to the bowl, insert simmer basket and add sweet potato.

    3. Cook 12min/100C/speed 2.

    4. Remove simmer basket and discard water.

    5. Add dates and chop 9sec/speed 9.

    6. Add all remaining ingredients and mix 1min/speed 4.

    7. Scrape down sides of bowl and repeat mixing if necessary.

    8. Transfer mixture to a lined, 20 x 20cm baking tin and bake at 180C for 25min.

    9. Leave to cool in tin then place onto a board and cut into 16 squares.

     

     

     

Tip

The brownies will not appear cooked when you remove them from the oven, but they will set as they cool. Let them cool completely before cutting.

    Great recipe, one of the first things I've made and it came out perfect. I used Rice Syrup instead of honey and only 50g and it still tasted sweet.

    Found these a bit grainy and not very sweet. I added some coconut sugar to the mix but could have done with more. 4yo loved them, the 2yo and me not so much.
