Ingredients

Moroccan spiced cauliflower & almond soup

  • 50 g raw almonds
  • 40 g olive oil
  • 0.5 teaspoon cinnamon, ground
  • 0.5 teaspoon coriander, ground
  • 0.5 teaspoon cumin, ground
  • 2 teaspoons harissa spice mix, (heaped)
  • 1 head of cauliflower (up to about 1kg), roughly chopped
  • 2 tablespoons Thermomix Vegetable Stock Paste
  • 1 litre water

Recipe's preparation

  1. Toast the almonds for 7-8min, 120C, speedsoftGentle stir setting"Gentle stir setting" . Chop 10sec, speed 7 and set aside.

  2. Add oil and spices. Cook 3min, 100C, speed 2.

  3. Add cauliflower, almonds, stock paste and water. Cook 20min, 100C, speed 2.

  4. Blend for 1min, starting on speed 5 then gradually turning up to speed 9.

  5. Serve and enjoy.

Tip

Weigh your ingredients as they go in so that you don't go over the 2.2kg weight limit. Overloading the machine could be dangerous for spilling hot liquid.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I have to say this is one of my most favourite soups.

    This was delicious. I didn't have any ground coriander so I used 1 tablespoon of frozen herbs. I also forgot to take the almonds out of the bowl, but it didn't seem to matter.
