- 4 Weetbix (approx 55 g)
- 150 g brown sugar
- 1 egg
- 2 tablespoons cocoa
- 150 gself raising flour
- 40 g coconut

Weigh in butter and melt for 1 minute 30 sec at 80C, speed 1
Add Weetbix and crush on Speed 5-6 for 3-5 seconds.
Add remaining ingredients and mix for 20 seconds on Speed 6 (stop and scrape down at 15 seconds if not coming together)
Press into lamington tray or square cake pan lined with baking paper (or even better, a silicone one doesn’t need lining!) and bake at 170C for 15 mins.

Very disappointed in this slice. Dry and crumbly and rather bland. Not sure if the recipe has been varied in an attempt to make it a more healthy option by minimizing the butter but it has definitely missed the mark.
A winner with my family. I reduce the sugar to 100g.

This turned out yummy though I think I over cooked mine as it is very crunchy, all most worthy of breaking my teeth.

This is so easy and really yummy. Mine turned out a little fudgy! I used coconut sugar instead of brown sugar.
This is a fabulous recipe. I have tried other weetbix slice recipes but this will be the one I turn to from now on. It was so quick to make and it has less butter than I've previously used. I used 120g of brown sugar but I may even try just 100g next time. Yum. Thank you for sharing.
