Chocolate granola bars
- 165 g Cashews
- 185 g honey, liquid
- 270 g Peanut Butter
- 110 g coconut oil
- 150 g rolled oats
- 110 g dessicated coconut
- 1/2 tsp salt
- 100 g Dark cooking chocolate

- 1. Chop the cashews on speed 5, for 2-5 seconds. Don’t blitz too much as you want some larger pieces.
Remove the cashews and set aside.
2. Add peanut butter, honey and coconut oil to the bowl. 4 minutes, 70 degrees, speed 2 (it may take longer depending on climate as my coconut oil was already liquid).
3. Add in cashews, rolled oats, and dedicated coconut to the bowl. Combine for 10 seconds, speed 3.
4. Place mixture into a lined slice tray (9x 13 inch), press into corners and fill any holes with a spatula.
5. Sprinkle with salt.
6. Refrigerate for an hour until firm.
7. Melt half a block of good quality dark cooking chocolate in a bowl in the microwave in 30 second intervals. You can use the thermomix for this step, but the bowl must be dry or your chocolate will seize.
Drizzle with a spoon over the granola bar. Cut to size.
Please be aware that the coconut oil in this recipe will mean that the muesli bar will be very soft in the heat.

Tip
Leave in fridge. Cut and place between pieces of baking paper in a container to store.
