Ingredients
Dough
- 100 g Butter, cubed
- 450 g Milk
- 10 g dried instant yeast
- 30 g Rapadura Sugar
- 750 g bakers flour
- 1/2 tsp sea salt
Cinnamon-Butter Mix
- 50 g Butter, softened
- 40 g Rapadura Sugar
- 3 tsp cinnamon

Combine ingredients in TM bowl 10sec/speed4. Set aside.
Add butter to TM bowl (no need to clean the bowl from having made the cinnamon mixture), melt 3min/speed2.
Add milk and heat 2min/37C/speed2.
Add remainding ingredients and mix 6sec/speed6, then knead 5min//.
Transfer dough onto ThermoMat (or lightly floured benchtop) and work into a ball. Wrap in ThermoMat (or place in a bowl and cover with a teatowell). Leave to prove in a warm place for 30 min or until doubled in size.
Preheat oven to 180C.
Knock down dough and devide into 2 equal sized pieces. Roll each piece into 1/2cm thick rectangle (about 40cm x 30cm). Spread cinnamon-butter mixture over dough, leaving 2cm on one long side.
Roll into a log and cut each log into 10 scrolls.
By placing a piece of string under the log and crossing over on top as if you were tying a knot you can get a clean cut without flattening your scroll pieces as you do when cutting with a spatula. See pic.
Place scroll pieces cut side up on baking tray with baking paper. Leave to prove for 20-30 min in a warm place covered with a tea towell.
Bake 15-20 min until golden and cooked trough.
Serve as is or sprinkle with icing.

Tip
Instead of mixing cinnamon-butter mixture in step one. Just spread soft butter on your dough and sprinkle sugar and cinnamon over.
This is how my mum thought me how to make cinnamon scrolls in Norway 20 years ago.
Add chopped nuts and maple syrup to your butter mixture for added flavour.
My 11yo thinks this would be great baked with stewed apple pieces and custard, but I haven't tried it yet.

These are unreal! Although i tried with apple the second time i made and i dont think i cut the apple up small enough.
Hi, I haven't made these yet but was wondering if you could freeze them?
Love these. So delicious and easy. I put a simple glaze on top (2 tbsp water, 2 tbsp sugar - heat to dissolve, brush over hot scrolls). Gave them a nice glaze without being too full on.
Small word of warning - if you live someone hot like I do, the cinnamon-butter mix is going to be a melty-sludgy mess to work with. Not the fault of the recipe, but next time I am making these in 30 degree heat, I will probably add small pieces of cold butter just before I roll them, rather than mixing and spreading the mix with butter in it.
