Ingredients
muffin batter
- 380 grams Self Raising Flour
- 100 grams Cold Butter, Chopped finely
- 220 grams raw sugar
- 310 grams buttermilk
- 1 egg
- 150 grams dark chocolate bits
- rind of 1 orange, peeled off with veggie peeler

Preheat oven to 200/180 degrees celcius fan forced. Grease a muffin tray or line with patty pans
Add rind to bowl, grate 7 seconds speed 9. Set aside.
Add raw sugar to bowl and grind 3 seconds speed 9. Set aside.
Put flour into bowl. Add butter then mix 5 seconds/speed 8 or until it resembles breadcrumbs.
Add reserved sugar, buttermilk and egg into TM bowl and mix for 10 seconds/speed 6. Scrape down the sides of bowl and if not quite mixed through slightly mix with spatula. DO NOT overmix.
Add chocolate bits and reserved orange rind then mix for 10 seconds/reverse/speed 4.
Divide mixture into muffin tray and bake for 25 minutes.

Too much 'setting aside'. Prefer easy, chuck it stages all into the bowl and mix it.
Great receipe, the whole family loved them. Perfect texture and taste. I left the orange rind in the bowl when I milled the sugar and added them together to the receipe when required. Thanks for posting this receipe, it's going to be a regular in my house
