Ingredients
Chicken Chorizo and Olive Penne
- 1 chicken breast, steamed in varoma or baked in oven
- 50-100 grams Parmesan cheese
- 1 Onion halved
- 1 clove garlic
- 4 sprigs parsley
- 40 grams olive oil
- 200-250 grams zucchini, roughly chopped
- 2 carrots, roughly chopped
- 400 grams tomatoes, roughly chopped
- 1 tablespoon tomato paste
- 500 grams water
- 100 grams white wine
- 1 tablespoon Vegetable Stock Concentrate (EDC)
- 250-300 grams Penne Pasta
- 150-200 grams pitted kalamata olives
- 1 chorizo sausage, thinly sliced

I'm cooking this todayRecipe's preparation
Place parmesan into mixing bowl and grate 10sec/ speed 9. Set aside. Clean and dry bowl.
Place onion and garlic into bowl andchop 3 sec/ speed 7. Scrape down sides of bowl.
Add carrot and zucchini and chop 3 sec/speed 5. Scrape down sides of bowl.
Add oil and saute 3 mins/varoma/speed 1
Add tomatoes, water, wine, stock and tomato paste and cook 10 mins/100c/speed 1
Add penne using spatula ensure the penne is completely submerged in the sauce.
Add chorizo, chicken and olives and cook 17 mins/ 100c/"Counter-clockwise operation" /"Gentle stir setting"
allow to rest for 5 mins prior to serving. Sprinkle with parmesan and parsley.

Tip
This can be dairy free by not serving with parmesan and gluten free using gluten free penne.
If you dont have wine, add extra water, will still taste great!
you can use capsicum instead of carrot.

This was excellent! and so easy. I made a half batch, didnt have chorizo so used a bit more chicken but it came out perfectly, thanks for a great recipe!

I cook it first, but yes if it works from raw then fantastic, even better
Is the chicken supposed to be precooked? In the ingredients list it states to be steamed or baked, but this isn't mentioned further in the recipe method. Although it says to put the chorizo and chicken in the sauce and cook for 17 minutes?
I added mine in at this stage raw, and it cooked fine. Although I cooked my pasta separately, as I think it would have passed the Max mark on the bowl if I had cooked it all together.
It tasted great though, will definitely do again!
