Batter

  • 1 medium zucchini
  • 3 eggs
  • 50 g Coconut Oil or Melted Butter
  • 50-80 g honey
  • 1 tsp vanilla extract
  • 35 g Raw cocao powder
  • 40 g Coconut Flour
  • 70 g Plain gluten free flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 170 degrees and prepare loaf tin, lined with baking paper if prefered or use a silican loaft tin.

     

    Cut zucchini roughly, put into bowl - 3 secs, speed 5.  Scrape down, repeat.  Scrape out and place in another bowl until needed.  Return to bowl and insert butterfly.

     

    Add eggs, coconut oil, sugar and vanilla - Speed 3, 6 seconds.

     

    Add remaining dry ingrediants - Speed 3, 6 seconds, scrape down and repeat.

     

    Scrape out into prepared loaf tin and bake 30-35 minutes until springs back when lightly touched and coming away from edges.  Or use skewer to test.

     

    Can be enjoyed while still warm or cold.  Refrigerate to store.

Tip

Take the loaf out of the oven when it is still a little moist in the centre so that it remains moist when cold.

    This was great thanks!! kids all liked them and my son asked me to make them for his class party! Only variation is I used wholemeal spelt flour instead of gf.
