  • 150 g golden syrup
  • 1.5 teaspoon bicarbonate of soda
  • 200 g rolled oats
  • 230 g plain flour
  • 150 g sugar
  • 30 g Shredded coconut
  • 1 Lemon peel
  • 70 g dark chocolate bits

Recipe's preparation

  1. The original Anzac slice is absolutely wonderful, however I wanted a little more zest to it, so added the lemon and reduced the sugar

    Pre-heat oven to 160'C. Line tray with baking paper.

    Place zest of lemon with the flour in TM bowl blitz, speed 8, 15 secs. Remove and set aside

    Heat butter and golden syrup into TM bow Closed lid"Closed lid" l for 2 mins, 60'C on speed 3 (or until dissolved). Add bicarbonate soda for last 5 seconds.

    Add remaining ingredients include flour/ lemon mixture and mix for 30 seconds on Interval speed Dough mode"Dough mode" . Turn out into slice tin and flatten with silicon spatula. Bake for 15-20 minutes, or until golden brown. Remove from oven and mark into pieces. Cool for 5-10 minutes in pan then transfer to wire rack.

Tip

My oven is also dodgy and tends to burn around the outside. Cook for 20 mins or until golden brown and still a little bit spongy.

    These cam out a treat.  The lemon zest added a excellent touch.  I didn't had the sugar because I thought the chocolate and syrup was sufficient and that turned out fine.
