Ingredients

CAKE

  • 50 grams Desiccated Coconut
  • 150 grams Boiling water
  • 225 grams Butter
  • 225 grams caster sugar
  • 1 teaspoon vanilla essence
  • 3 eggs
  • 200 grams self-raising flour
  • 1/2 teaspoon baking powder

MALIBU CREAM CHEESE FROSTING

  • 25 grams Butter
  • 180 grams cream cheese
  • 375 grams icing sugar
  • 25 grams Desiccated Coconut
  • 4 tablespoons Malibu, Coconut Rum

Recipe's preparation

  1. CAKE:

    Preheat oven to 180 degrees.

    Soak the coconut in the boiling water and leave for about 5 minutes

    (until the coconut soaks up the water).
    Put all the ingredients (including the undrained soaked coconut)

    into the Thermomix and mix (about speed 5) until you have a soft batter.

    Pour into cake tin (I use 2 loaf tins).
    Cook for about 25-35 minutes, or until ready

    (cake tester inserted should come out clean).

     

    MALIBU CREAM CHEESE FROSTING:

    Beat the butter in the Thermomix until soft and creamy.
    Add the cream cheese and beat until smooth.
    Add the icing sugar, coconut and Malibu and mix until combined.

    Ice the cake with the frosting.

Tip

I use 2 loaf tins for this recipe.

    If you have trouble with cakes sticking simply line your tin with greased baking paper, some tins just seem more susceptible to cakes sticking than others. 🤷🏻‍♀️

    The Bush Gourmand: my cake stuck also, both times I made it. Second time I left it to cool longer and it mostly came out, apart from a bit on the bottom which I managed to patch up. So good even if you have to eat it as a big mess lol

    Absoloutly love this recipe. First time I made it turned out beautifully, ever since then I have made it 5 or 6 times and my cake always sinks tmrc_emoticons.( still tastes good but just wondering if this has happened to anyone else and if so do they have any tips to stop it from happening?

    I bit the bullet and made this today. Gentle stir setting"Gentle stir setting" Aside from how very easy it is to make, from assembly to turning out , this is a great recipe and very forgiving. I love to tweak recipes so of course i wasn't strict with myself, a fabulous airy tasty cake. Stable enough to withstand a lunch box. I only ever ice cakes for visitors or occasions so i am unable to comment on the decadent icing and i didn't have Malibu... Party

    very nice recipe. Reading the comments I used pineapple juice for soaking the coconuts. Since I prefer clean cooking I exchanged the sugar with dried pineapple, using 170gs. The flour I used was 100g spelt, grinding 1min on spead 10. Then I added the other flour plus the chopped dried pineapple. shreddered the whole thing for appr. 30 secs and poured it into another bowl. Butter and eggs creamed regular and then added all other ingrediences. It turned out perfect. I guess you could also soak the pineapple with the coconut. Just mixing it with the flour has the advantage that it doesn't get so sticky.
    Without icing if is a perfect clean cake.
    But I used icing, and children friendly without the rum, I used the coconut syrup, that you also use for cocktails. As it contains sugar it is not as clean as could, but for me perfectly allright.
    For sure, clean baking means the consistency of a cake changes, as sugar has other chemical reactions when used in baking, but it will be worthwhile nonetheless.
    Actually, I was only dropping by from Germany, and if permitted I may place the recipe in the clean version on our own, German thermomix recipe webpage, linking to this recipe as the original.
