Ingredients
Coconut oil
- 180 grams coconut oil, Solid not melted
Coconut Sugar
- 100 grams Coconut sugar
Mixed Nuts
- 100 grams Mixed nuts of choice, eg. Almonds, Brazil, Walnuts
Vanilla Extract
- 1 teaspoon vanilla extract
Eggs
- 2 eggs
Wholegrain Quinoa Flour
- 200 grams WHOLEGRAIN QUINOA FLOUR
Baking Powder
- 2 teaspoons baking powder
Bicarb Soda
- 1 teaspoon bicarb soda
Mesquite Powder
- 20 grams Mesquite Powder
Coconut
- 20 grams Coconut, Shredded

I'm cooking this todayRecipe's preparation
Add Nuts to the TM Bowl"Closed lid" Pulse 2-4 times
Until nuts are crumbly then set them aside
Add coconut oil (solid), coconut sugar and vanilla extract to the TM Bowl
Mix for 15 sec speed 6 then scrape down sides
With Blades rotating on Speed 3
Add one egg at a time
Add Quinoa flour, bicarb soda, baking powder & the Mesquite powder
Mix 30 sec on Sp 4
Add coconut and nuts
10 sec "Counter-clockwise operation" Sp 3
Roll into 1 tablespoon or slightly larger balls
Pop them on your lined tray and press lightly with a fork
Bake in a moderate oven
Around 180 degrees (Fan forced) for 10-12 mins or until golden
Cool on wire rack
Enjoy!!
Preheat Oven to around 180 degrees (Fan forced)
Tip
The cookies will be soft, slightly crumbly and chewy perfect to enjoy with a herbal tea!

Made a batch of these cookies yesterday, they are delicious and very moorish. Cooked first tray for 12 minutes and they were beautiful,soft and chewy. Second tray I cooked for an extra 4 minutes, they were also beautiful but lovely and crispy. Both outcomes are now hot favourites
