Ingredients
Base
- 110 gram raw sugar
- 120 gram unsalted butter, room temperature
- 1 egg
- 1 tsp vanilla extract
- 230 gram plain flour
- 1/2 tsp baking powder
- Pinch salt
Topping
- 220 gram raw suger
- 2 lemons, juice and peel
- 4 eggs
- 50 gram plain flour
- 370 gram thin cream
- 160 gram coconut milk
- 150 gram passionfruit pulp, approx 10-12 passionfruit

Preheat oven to 180C. Grease and line a 4cm deep, 30 x 20cm baking pan.
BASE
Place sugar in bowl and mill for 6 seconds on speed 9.
Add butter and cream for 40 seconds on speed 4.
Add egg and vanilla and mix for 10 seconds on speed 4.
Add flour and salt and mix for 20 seconds on speed 4, stopping and scraping down sides of bowl once.
Flour hands and press base into the pan. Cook for 15 minutes.
Make the topping whilst the base is cooking. If you don’t have a second bowl, just give it a wash.
TOPPING
Place sugar and rind from 2 lemons in bowl and mill for 20-40 seconds on speed 9.
Add eggs and mix for 1 minute on speed 4 until the mixture has lightened in colour.
Add the remaining topping ingredients including the lemon juice and mix for 10 seconds on reverse on speed 3.
Pour the mixture onto the cooked base and cook for 45-50 minutes or until the slice has a light golden colour.

Tip
Cool slice completely in the pan. When cool, slice into squares (you can also dust with icing sugar if you wish). Approx 20 squares.
This slice is sort of a bit like a passionfruit curd / baked cheesecake.

My favourite way to use up passionfruit! It is similar to my favourite Bill granger's melt n mix lemon slice topping (but his has 100g flour in topping) ... like a coconut milk passionfruit curd / baked cheesecake.
This slice is amazing! It's definitely more than a slice, its delicious and rich tasting!
