  • 170 g Dates pitted
  • 180 g Coffee, strong brewed, Can use instant or decaf if preferred1
  • 1/2 tsp ground cinnamon
  • 1 tsp Grated zest of orange
  • 1/2 tsp Bicarb. Soda
  • 70 g cocnut oil
  • 90 g brown sugar or coconut sugar
  • 2 eggs
  • 180 g Gluten free self raising flour
  • 1/2 tsp GF baking powder

Recipe's preparation

    Method
  1.  

    Preheat oven to 180C grease 2 muffin trays and set aside

    Place coffee, cinnamon, dates, orange zest, bicarb soda into mixing bowl and let stand for 5 min.

    Blitz for 10sec sp 9

    Add remaining ingredients and blitz 15sec Sp 5

    Fill muffin trays about half way with mixture and bake for about 20 minutes or until a skewer comes out clean.

     

    Icing:

    Blitz 200 g sugar in clean bowl for 10-15 sec sp10

    Gradually add strong coffee to icing sugar until you have a thick icing. Decorate with coffee beans or even better, dark choc coated coffee beans if you have them.

Tip

If preferred, you can make a chocolate version. Replace coffee with 1tblsp cocoa/cacao powder and add 180g hot water.

    Loved it. Only had a few dates but topped them up with coconut sugar. Also used a bottle of pre-made coffee milk. So delicious.

    Great recipe!

    Made these with standard flour and rice bran oil, and didn't worry about icing them. I used fresh brewed coffee from our coffee machine and was worried it might be a bit strong, but the sweetness in the muffins offsets the coffee flavour. Will definitely make again, thanks for sharing your recipe.

    Lovely, light and moist. Love the dates 😊. I didn't add the orange zest and used self raising flour.

    Great recipe I tried it but only needed to add 1 T /spoon of creem cheese, 10gm of crushed cloves and  curdemom wich gave it an extra cick.
