Ingredients

  • 60 grams Butter, In pieced
  • 220 grams raw sugar
  • 1 teaspoon vanilla
  • 1 orange, Rind removed
  • 4 eggs
  • 335 grams flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 150 grams shelled pistachio nuts
  • 100 grams craisens
  • 2 tablespoons sugar, Extra

Recipe's preparation

    Method
  1. Place rind and raw sugar in mixing bowl. Grind 10 seconds, speed 9

    Add butter, essence and mix for 5 seconds, speed 6

    Add 3 eggs, one at a time through lid, on speed 5

    Add flour, nuts and craisens mix on reverse, speed 5 for 3 seconds.

    Knead for 1 minute.

    Take out of mixing bowl and place in thermomat and refridgerate for two hours.

    Line 2 cookie sheets with baking paper.

    Divide dough into 2 piences, shaping each one into a log. Place on cookie sheet on diagonal. Brush with remaining beaten egg. Sprinkle with reserved sugar.

    Bake in a moderate oven, 180 degrees celcius for 20 minutes or until firm. Allow to cool on trays.

    Using a serrated knife, cut logs diagonally into 1 cm pieces. Arrange on cookie sheet in single layer. 

    Bake in a moderately slow oven, 150 degrees, for 15 minutes. Turning halfway, until dry and crisp.

    Cool on wire racks

If desired when cool, drizzle or dip into melted chocolate of choice.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
