Cream butter and sugar 60 Seconds, Speed 4.
Beat in egg 15 Seconds, Speed 4 add sifted flour, salt and coconut.
Roll into 15g balls and press flat between the hands.
Dip the top side into extra castor sugar.
Place on lined oven trays, allow for spreading.
Bake in moderately hot oven180C-190C (160C-170C fan forced) 10 to 15 minutes, until just golden.

Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.
We use Australian tablespoons and cups:
1 teaspoon equals 5 ml;
1 tablespoon equals 20 ml;
1 cup equals 250 ml.
All herbs are fresh (unless specified) and cups are lightly packed.
All vegetables are medium size and peeled, unless specified.
All eggs are 55-60 g, unless specified.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Is there a step missing once you add the flour, coconut and salt?
We repeated the 15 secs speed 4 but it didnt combine properly.
We mixed it by hand until combined and cooked them.
They taste lovely and will make great sand for my daughters birthday cake base.
A great, old fashioned biscuit. Hard to find homemade bickies that stay crispy for dunking in hot chocolates but these are perfect!

These are a beautiful crunchy cookie. My husband and son love them.
We do make them with 1/2 the sugar and added a bt of cinnamon sugar to the top b4 baking instead of castor sugar.
