Ingredients

Batter

  • 140 grams Butter, softened
  • 130 grams sugar, Brown
  • 1 teaspoon vanilla, essence
  • 2 eggs
  • 360 grams flour, plain
  • 1/2 teaspoon Bicarb. Soda
  • 1/2 teaspoon salt
  • 150 grams Oats,rolled
  • 30 --- cumquats, diced
  • 110 grams choc chips

Recipe's preparation

    Making the batter
  1. Preheat oven to 180 celcius

    Place softened butter (or non-dairy equivalent such as nuttalex) and brown sugar in bowl.

    Mix 15 seconds speed 5.

    Scrape down bowl

    Add vanilla essence.

    20 seconds/speed 4

    While beating add in 2 eggs

    Scrape down again

    Add in flour and bicarb and salt.

    20 seconds/speed 4 (Use spatula to move)

    Add oats, 1 cup of diced cumquats and choc chips.

    Reverse, speed 3, use spatula to move until mixture is blended

    Drop spoonfuls onto lined baking trays

    Bake for 10-12 minutes until golden brown (will harden up on cooling)

Tip

Approx 30 cumquats.. enough to fill 1 cup.

I chopped my cumquats quite roughly so I could remove the pips.  You could cut them smaller in the thermomix after the initial chop but I didn't mind them chunky.

I made about 20-25 biscuits of differing sizes.
