Ingredients

Dry ingredients

  • 1 --- gluten free flour, Cup
  • 1/2 teaspoon Baking Powder, gluten free
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet ingredients

  • 250 grams Almond Spread
  • 3 tablespoons coconut oil, Melted
  • 1/2 Coconut sugar, Cup
  • 1/4 Pure Maple Syrup, Cup
  • 2 Flax eggs, Whisk together 2 tbsp ground flax + 6 tbspn warm water, let set for 10 min
  • 1 teaspoon Pure Vanilla Extract

  1. 1. Make flax eggs first and set aside
    2. preheat oven to 180 C. Grease biscuit tray. Set aside.
    3. Add dry ingredients to bowl Closed lid"Closed lid" . Mix 2 sec / speed 5
    4. Add wet ingredients to bowlClosed lid"Closed lid" . Mix 10 sec / speed 5
    5. Using a soup spoon, fill biscuit tray. Makes 24 cookies
    6. Bake for 10 - 14 min. Transfer to cooling rack.

Tip

Cookie dough will be very soft and a bit sticky.

I use a whoopie tray to help keep the cookies in shape.
Cookies freeze well. Separate layers with baking paper to prevent sticking together.
I have also chopped and added 100g dates and 60g cranberrries as a variation.
