- 100 grams cranberries, dried
- grams SR Flour White or Wholemeal, 11/4 cups
- Milk of choice, Buttermilk is good

Throw everything into bowl and add enough milk approximately one and a half cups and stir on reverse speed until thoroughly mixed low speed. It should have a batter consistency. If too stiff add a little more milk. Line a buttered loaf pan with parchment paper( 1 strip to cover length and ends is fine). Pour mix into tin and sprinkle some pepitas seeds or chopped pistachio nuts on top. Bake in oven 175 fan forced for approximately forty minutes but will depend on individuals oven. Test with skewer in centre.this is a very moist loaf and is even better left till next day.This is a very versatile loaf and amounts of fruits can be adjusted. Other fruits/grains/seeds may be added/substituted eg chopped dates,prunes,pepitas but I would suggest to keep the apricots and sultanas to keep it moist. Serve spread with butter. Great for breakfast alternative. Keeps well in container. There is quite a bit of fibre in this so careful how much you eat if you know what I mean.lol

Hi thermomix HQ. is there a way to edit recipes, there does not appear to be an edit button as in the old format, hmm frustrating . I just realized that the new format of listing the ingredients has created confusion with this recipe with the cup measurement for the flour underneath and being associated with the next item (milk) instead.
:O oops, sorry I didn't even realize it wasn't showing in the ingredients list however this recipe is amazingly forgiving with milk and flour amounts, as long as you end up with a consistency that is not runny. Truthfully I never measure the amounts and I normally just stir it all together in a bowl, but I really wanted to share this simple delicious recipe with the community as it is sooo good and a great standby. Stays fresh and moist for many days. N.B.If you choose to add oatbran or similar,too much will result in a drier loaf. Just play around with it till you hit on what suits you, chopped dates are a good addition
