Ingredients

  • 2 carrots
  • 2 apples, chopped and decored
  • 190 grams raw sugar
  • 150 grams plain flour
  • 150 grams wholemeal plain flour
  • 2 heaped tablespoon cinnamon
  • 2 teaspoons baking powder
  • 150 grams dates
  • 80 grams Coconut
  • 150 grams walnut or almond, i used almond in the pic
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 110 grams vegetable oil

Recipe's preparation

    Energy Muffins
  1. Preheat oven 180 degrees

    Chop carrot and apple 10secs/sp6

    Place in a side bowl until later.

    Add sugar 10secs/sp10

    Add flours, cinnamon and baking powder  5secs/sp4Counter-clockwise operation"Counter-clockwise operation"

    Add dates, carrot, apple, coconut and nuts 5secs/sp 5 (longer if you want your nuts and dates chopped finely)

    Add eggs, oil and vanilla 10secs/sp4Counter-clockwise operation"Counter-clockwise operation"

    Scape down bowl and losen contents on the bottom with spatula.

    Divide into muffin trays and cook for 20-25mins or until golden.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.     These muffins are delicious! I've made them twice in a week and have tweaked the recipe each time to:

    - 1st time - had no wholemeal flour so used 300g plain flour, had no dates so used sultanas, omitted nuts (so they could be taken to school), used shredded coconut, canola oil and only 1 teaspoon cinnamon

    - 2nd time - had no wholemeal flour so used 300g plain flour, had no dates so used sultanas, used 75g walnuts and 75g slivered almonds, used shredded coconut, canola oil and only 1 teaspoon cinnamon

    The first lot I took to school for canteen and staff, lots of great feedback and positive comments! Second lot I took into work for morning tea and have had 3 people ask for the recipe! And lots of comments saying how delicious they are.

    Will definitely be making these regularly, they are a winner! Thanks for sharing! tmrc_emoticons.)

    These have a lovely taste, I did tweak them. Not a fan of dates so chopped with carrot and apple. Added only white flour as that's all I had. Would chop nuts first then set aside as they didn't chop. ( didn't want mash at the second last step) Only added 1 tbsp cinnamon which was more than enough and sadly missed adding coconut. Will definitely make again.
