Ingredients

sauce

  • 30 grams olive oil
  • 600 grams onion
  • 2 Capsicum, any colour
  • 1/4 cabbage, 1/4 of a head
  • 5 cloves garlic
  • 15 centimetres ginger
  • 1 heaped tablespoons cumin
  • 1 heaped tablespoons curry powder
  • 1 heaped tablespoons Corriander powder
  • 1 heaped tablespoons Fenugreek seeds, ground
  • 1 heaped tablespoons smoked paprika
  • 1 can chopped tomatoes
  • 400 grams water
  • 40 grams ghee or oil
  • 1 heaped tablespoon tumeric

Recipe's preparation

    Curry Stock sauce
  1. This stock is the main ingredient in my curry recipes and can be made and frozen ahead of time.

    This recipe makes 3 portions enough for 3 curries .

  2. 1. add onion, capsicum, garlic and ginger  10secs/sp5.

    2. add cabbage. 20secs/Sp5.

    3. add olive oil 10mins/110/Counter-clockwise operation"Counter-clockwise operation" 1

    4. add cummin, curry powder, corriander powder, fenugreek seeds (ground) and smoke paprika 5secs/Counter-clockwise operation"Counter-clockwise operation" sp3

    5.add can of tomatoes and water 20mins/60/Counter-clockwise operation"Counter-clockwise operation" 2

    6. add ghee (or oil) and tumericn 20mins/60/Counter-clockwise operation"Counter-clockwise operation" 2

    7. allow to cool slightly

    8. 30secs/sp6 until smooth

Tip

I freeze this in containers with 3 cups of sauce in each this is enough for one of my curry recipes

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
