Enyucado Cartagenero (Colombia)

  • 1500 grams coconut pulp, Fresh, brown. Cut into small pieces.
  • 700 grams cassava, Fresh, peeled, middle vein removed, and pulp cut into small pieces
  • 250 grams White cheese, Fresh, Latino, and thickly grated
  • 125 grams Old cheese, Latino and thickly grated
  • 170 gram Milk
  • 244 grams sugar cane, Or to taste.
  • 2 level tbsp Aniseed Seeds
  • 1 level teaspoons salt, Or to taste.
  • 2 level tbsp vanilla extract
  • 1 level tsp vegetable oil, To grease the molds.

Recipe's preparation

    Coconut
  1. Add 1500 grams of coconut to the mixing bowl.
  2. Blend"Blend" 2 seconds
  3. Blend"Blend" 2 seconds
  4. Blend"Blend" 2 seconds
  5. Set aside.
  6. Cassava
  7. Add 700 grams of cassava to the mixing bowl.
  8. Blend"Blend" 2 seconds
  9. Blend"Blend" 2 seconds
  10. Blend"Blend" 2 seconds
  11. Blend"Blend" optional 2 seconds.
  12. Set aside
  13. Mixture
  14. In a large bowl, mix by hand all of the ingredients, including the cheeses, the cassava, and the coconut.
    After combining all of the ingredients, the texture should be soft, creamy, and slightly grainy.
  15. Oven and Pans
  16. Preheat the oven to 400°F.
    Apply a thin layer of oil to a 9x13-inch large pan or two 12-inch round pans.
    Transfer the mixture into the oiled pans and bake for approximately 40 minutes or until the top appears medium dark gold and a knife inserted into the center comes out clean.
    Allow the mixture to rest for a few minutes before removing it from the mold.
    Let it cool on a rack and enjoy.

Tip

Scrape the mixing bowl with the spatula when necessary.
