- 85 g white chocolate melts
- 185 g Butter, Roughly chopped
- 185 g dark chocolate
- 3 eggs
- 250 g caster sugar
- 120 g plain flour
- 40 g cocoa powder

Preheat oven to 180 degrees. Place milk and white chocolate melts into TM bowl.
Chop melts 5 secs / speed 5. Melts should be roughly chopped and chunky.
Remove chopped melts to a bowl and set aside. No need to wash TM bowl.
Add butter and dark chocolate to the TM bowl. Melt 5 mins / 50 degrees / speed 1.
Scrape down sides of TM bowl and separate unmelted butter from blades (if required). Continuing melting 3 mins / 50 degrees / speed 2.
Pour melted chocolate and butter into a small jug and set aside to cool slightly. Rinse and dry TM bowl.
Add caster sugar and eggs to TM bowl. Beat 45 secs / speed 5 or until light and creamy.
Add melted dark chocolate and butter mixture to TM bowl. Fold 30 secs / "Counter-clockwise operation" / speed 1.5.
Add flour, cocoa and reserved chopped chocolate melts to TM bow. Mix 7 secs / speed 5 until just combined.
With the assistance of the spatula, pour into a 27cm x 18cm slice tin lined with baking paper and smooth to edges. Bake at 180 degrees for 35 minutes or until a skewer comes out clean.
Cool and cut into squares.
Tip
You'll need caster sugar for this recipe so if you don't have any on hand, mill 250g raw sugar 15 secs / speed 7 prior to commencing the recipe.
These freeze quite well. Once baked, cool the slab and wrap in two layers of glad wrap, followed by foil. To enjoy, thaw slab at room temperature and cut into pieces.
