Ingredients

Cake Mixture

  • 1 zest of 1 lemon, (use vegetable peeler)
  • 200 grams raw sugar
  • 230 grams Self Raising Flour
  • 10 grams poppy seeds
  • 200 grams water
  • 40 grams vegetable oil, (or sunflower oil)
  • 5 grams Vinegar (white)
  • 1 Lemon Juiced

Soaking Syrup

  • 100 grams Fresh Lemon Juice (about 2-3 lemons)
  • 100 grams sugar

Recipe's preparation

    Cake Mixture
  1. Preheat oven to 170- 180 degrees and prepare muffin tray / patty pans (approx 24) or cake tin (20cm).

     

  2. Add Lemon zest and sugar - 10 sec on speed 7 (mill)

     

  3. Add Self Raising Flour and poppy seeds (all dry ingredients) - 5 sec on speed 4

     

  4. Add juice of 1 Lemon, water, vegetable oil and vinegar (wet ingredients) - 6 sec on speed 5

     

  5. Patty pans or muffin tray:

    Spoon mixture evenly into patty pans or muffin tray. Bake for 8-12 minutes, or until golden, and spring back slightly when touched.

     

    OR

     

    Cake Tin

    Pour into cake or loaf tin (greased or lined with baking paper).  Bake for 25-30 minutes, or until golden, and spring back slightly when touched.

  6. Soaking Syrup
  7. Prepare while the cake mixture is in the oven.  (It should be poured over the cake while it is cooling.)

     

  8. Add lemon juice and sugar to the mixing bowl - 2 minutes at 90 degrees on speed 2. Gentle stir setting"Gentle stir setting"

     

  9. Pour hot syrup over the hot cake, and brush the syrup that falls onto the tray around the sides of the cake.

     

Tip

This cake freezes really well and still is yummy without the syrup (if you want to avoid the extra sugar).

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
