Ingredients

  • 75 geach whole blanched almonds, macadamias, brazil nuts and pecans
  • 110 gglace fruit (other than cherries) chopped roughly
  • 25 gSR flour
  • 1 tsp allspice
  • ½ tsp Nutmeg
  • 50 g sugar
  • 70 g honey
  • 110 gglace cherries (mixture of colours)
  • 200 g chocolate
  • 2 tbsp oil

Recipe's preparation

  1. Pre-heat
    oven to 190ºC.



    Lay
    all nuts on baking tray and roast for 10-12 minutes until fragrant.



    Place
    cooled nuts into TM bowl and roughly chop for 2-3 seconds on speed 4.
    Set aside.



    Place
    glace fruits into TM bowl with flour and spices and roughly chop for 4 seconds on speed 4. Set aside with nuts.



    Place
    sugar and honey into TM bowl and warm for 4
    minutes
    at 70ºC on speed 1.



    Add
    reserved fruit and nut mix as well as whole cherries and combine for 10 seconds on Reverse + speed 3.



    Spoon
    small amounts onto lined baking trays and with wet hands smooth edges and tops.
    Cook for 20 minutes until golden and bubbly. Remove from oven and cool
    completely before removing from trays.



    Place
    chocolate into clean and dry TM bowl and mill for 5 seconds on speed 7.



    Add
    oil and melt for 4 minutes at 37ºC on speed 2.



    Turn
    Florentines over and spread chocolate on smooth side of cookie. Decorate with a
    fork through chocolate in a wavy pattern. Allow chocolate to set before
    serving.

    Delicious flavour. I doubled the recipe and I think I must have mixed it a bit too much on the last step as they went a bit red from the cherries being too munched up. My brothers reckoned they looked like raw hamburger patties!! They did look a bit strange but my brothers still managed to polish off a double batch in 2 days though!! I decorated mine with white chocolate on the bottom and wrote 'Enjoy' in dark chocolate instead of making wavy patterns. Next time I'm going to try leaving out some of the nuts and try putting cornflakes in instead... that's what my old recipe had... be interesting to see how that goes. This recipe is a lot healthier than my old recipe which had condensed milk etc. in it.
