Ingredients

Dough

  • 70 grams butter - I use Nuttelex for dairy-free version
  • 130 grams raw honey - any honey will do
  • 1 tsp vanilla bean paste or vanilla extract - optional
  • 1/2 tsp Bi-carb soda
  • 200 grams wholemeal flour - white flour will do

Fruit Filling

  • 150 grams red or green apples, cored and quartered
  • 150 grams mixed berries
  • 2 drops doTERRA cinnamon oil or 1 tsp ground cinnamon

Recipe's preparation

  1. Prepare dough first:

    1. Melt butter and honey together in bowl 3 min, 60 degrees, speed 2

    2. Add remaining ingredients and mix 15 sec, speed 4. Scrape sides of bowl and repeat until well-combined

    3. Place dough mixture onto Thermomat (or glad wrap), form into a ball, wrap and refrigerate while you prepare the fruit filling

    ** Pre-heat oven to 160 degrees and line a baking tray **

    Fruit filling:

    1. Place all ingredients into the bowl and chop 10 sec, speed 6

    2. Cook for 20 min, 90 degrees, speed 3

    3. Remove MC (measuring cup) and cook for a further 5 min, 90 degrees, speed 2 to allow the fruit filling to thicken a little

    4. Refrigerate fruit filling while you complete the dough prep

    Dough prep and assembly:

    1. Roll out the dough between your Thermomat and a sheet of baking paper (or two sheets of baking paper) approx 3mm thick. Try to form it into a square or rectangular shape

    2. Using your Thermomix spatula, cut the dough into rectangular pieces, ready to fill and roll. Much like sausage rolls

    3. Using a teaspoon, place a thick line of fruit filling a third of the way down the rectangular pieces and roll. Placing them with the end/seam side down onto your baking tray will prevent them from opening up during the baking process

    4. Bake for 10 min and check - if they're golden, remove them from the oven and allow to cool. Otherwise, they may need a further 5 minutes. Each oven will vary. I like to start off at low temps and short cooking times with these doughs to avoid over-cooking.

Vanilla is optional

You could use 100% apple or 100% berries. Fresh is best, but frozen will also work

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Delicious!

    This is the first thing my 7-year old has eaten out of the thermo (had it two years).

    Although mine didn't look as good as yours - possibly didn't cook long enough, or dough was too thin - they were still tasty!

    I'll try again and see if I can make them pretty tmrc_emoticons.;)

    These tasted beautiful, lovely and light. The jam doesn’t spread and make a mess when cooking, so you can really fill them up with fruit. I used spelt flour for mine, 300gms.
