Raw Healthy Snack Bars (Nut-Free)
- 100 grams sun butter - I use Quirky Jo's recipe
- 10 grams tri-coloured quinoa (optional)
- 100g pitted dates
- 30 grams dried cranberries
- 20 grams pepitas
- 10 grams Desiccated Coconut
- 1 teaspoon Vanilla Bean Paste
- 70 grams oats

- Place sun butter, dates & quinoa into the bowl & mix 10sec sp6. Scrape & repeat.
Add remaining ingredients & combine 30sec sp3 "Counter-clockwise operation" . Scrape & repeat.
Press mixture into moulds or shallow tray, refrigerate for 30min then slice into desired shape.
Store in airtight container in fridge or freezer.
For a drizzle of chocolate - 50g dark chocolate broken up & mill 10sec sp10. Melt 2-3min 5° sp3. Use the rest to make a hot chocolate. Just add milk, vanilla if you like and warm 2min 90° sp2 😋

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Jaganew:hi 🙂 You could add some coconut oil (30g) or a few dates, maybe 4-5 to the mix. That'll help.
"No counter-clockwise operation" My mixture was very crumbly. After freezing and then defrosting the bars would not hold their shape. What could I add to hold them together please ?
Perhaps my sun butter (Quirky Jo's recipe) needed more oil in it ?

Hi. What can I replace the oats with to make it gluten free? Quinoa or rice flakes?
