Trail Bars
- 120 g Brazil nuts (or preferred nut)
- 100 g pepitas, Green pumpkin seeds
- 110 g rolled oats
- 50 g sunflower seeds
- 35 g sesame seeds
- 110 g wholemeal or spelt flour
- 1 tbsp cinnamon ground
- 100 g craisins (dried cranberries)
- 1 pinch salt
- 110 g brown sugar
- 120 g honey
- 1 egg
- 2 egg whites
- 1 tbsp vanilla extrac
- 140 g almond butter, This can be pre-made

Preheat oven to 160C (fan forced). Grease slice pan and line with baking paper.
Place brazil nuts, pepitas, oats, sunflower seeds and sesame seeds into TM bowl. Dry roast 13 mins/100C/"Counter-clockwise operation" /speed 2 with MC off. Allow to cool.
Add flour, cinnamon, craisins, and a pinch of sea salt into the TM bowl. Combine 7 secs/"Counter-clockwise operation" /speed 4 or until well combined. Set aside.
Beat sugar, honey, egg, egg whites, vanilla and almond butter 10 secs/"No counter-clockwise operation" /speed 4.
Put flour mixture into TM bowl with wet mix and combine well 10 secs/"Counter-clockwise operation" /speed 4.
Empty mixture into prepared slice pan, then using the back of a spoon level and compress. Bake for 25 mins or until golden and firm to the touch. Cool in pan. Cut in half length ways then nine bars on each row.
Tip
Spelt is an ancient variety of wheat, with a nutty flavour. If you have spelt grains you can mill these into a flour using your Thermomix.

My fussy girl likes this... although for me its a little too sweet. I'll reduce the amount of honey next time..Had no trouble with cutting it at all. Didn't crumble. But I wonder if thats because i milled the seeds and nuts? Anyway I'd make it again...
Just crumbled once cooked and is more like trail mix than bar - what went wrong? Tastes great though.
