Ingredients

Fudge brownie chocolate cake

  • 420 grams plain flour
  • 30 grams cocoa powder, 70% cocoa
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 370 grams sugar
  • 145 grams oil, (eg rice bran oil or vegetable oil)
  • 2 tablespoons vinegar
  • 420 grams water

CAKE TOPPING

  • 90 grams Butter, cubed
  • 3 tablespoons water
  • 4 teaspoons cocoa powder
  • 200 grams icing sugar

Recipe's preparation

    Cake Batter
  1. Pre heat oven to 175º and grease an oven proof dish
    (approximately 25x30x6cm).

    Place flour, cocoa powder, bicarbonate of soda, salt and sugar into mixing bowl.
    Mix 10 seconds
    Speed 5

    Scrape down the sides.

    Add oil, vinegar and water.
    Mix 10 seconds
    Speed 5
    Scrape down the sides.
    Mix again 5-10 seconds
    Speed 5

    Pour the mixture into oven dish.
    Bake at 175º for 30-35 minutes, until skewer comes out clean.
  2. Cake topping
  3. In a clean bowl:
    Cook butter, water and cocoa powder:
    4 minutes
    90º
    Speed 1

    Add icing sugar
    Mix:
    30 seconds
    Speed 2

    Pour icing over hot cake as soon as it comes out of the oven

Tip

1. Preparing the topping about 5 minutes before the cake is due to come out of the oven will ensure that it is still hot and thus runny enough to be absorbed by the warm cake.
2. I pierce some holes on top of the cake to assist absorption of icing.
3. If you'd like to add additional toppings (lollies or sprinkles) do so as soon as you have poured the icing mixture over, so that the toppings stick to the cake.
4. Once baked and cooled down, this cake can be cut into portion sizes and frozen.
