Ingredients

COCONUT BISCUITS

  • 220 grams plain flour
  • 1 heaped tsp milk powder
  • 1 level tsp baking powder
  • 1 level tsp bicarbonate of soda
  • 1 pinch salt
  • 75 grams caster sugar
  • 50 grams Shredded coconut
  • 1 egg
  • 90 grams Butter, melted
  • 1 level teaspoons vanilla essence, or paste
  • 30 grams golden syrup

Recipe's preparation

    COCONUT BISCUITS
  1. Preheat oven - 180°

    Place flour, milk powder, baking powder, bicarbonate of soda, salt and castor sugar into the mixing bowl.
    Mix 10 seconds
    Speed 6

    Scrape down the sides

    Add coconut, egg, melted butter vanilla and syrup.
    Mix 10 seconds
    Speed 4
    Scrape down the sides
    Mix 30 seconds speed 4

    Roll the dough (it will be very sticky) between 2 sheets of cling film, about 3mm in thickness.
    Place flat into freezer for 10 minutes.
    Cut into shapes and place onto baking tray.
    Bake for 15-20 minutes until golden brown.

Tip

Roll the dough between two Thermomats®.
Use the spatula to cut into squares/triangles and place the bottom Thermomat® directly onto the oven tray to bake.

If the biscuits are not hard enough for your liking, turn the oven off, return tray to the oven, with the door ajar for half an hour.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
