Ingredients

Ginger Bread Biscuits

  • 90 grams unsalted butter
  • 105 grams castor sugar
  • 150 grams golden syrup
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon bicarbonate of soda
  • 310 grams plain flour

Royal Icing from EDC

  • 250 grams white sugar
  • 1 egg white
  • 1-2 level teaspoons lemon juice

Recipe's preparation

    Ginger Bread Biscuits
  1. 1. Pre heat oven to 180ºc. 

    2. Melt butter, sugar and golden syrup in bowl, Counter-clockwise operation"Counter-clockwise operation" 80ºc 4 minutes speed 2.

    3. Scrape down sides of bowl. Blend for 10 sec speed 4.

    4. Allow to cool for 5-10 minutes.

    5. Add spices, salt & bicarbonate of soda to bowl.

    6. Gradually add flour, Counter-clockwise operation"Counter-clockwise operation" speed 3. 

    7. Scrape down sides of bowl pulling dough towards the blade. Mix until well combined 30 seconds speed 3.

    8. Remove dough, split in half. Wrap half in plastic wrap so it won't dry out.

    9. Roll out dough to approx 5 mm thick on Thermo Mat.

    10. Cut into shapes using cookie cutters.

    10. Place biscuits on baking tray lined with baking paper and bake for 10 minutes.

    11. Allow to cool and then decorate with Royal icing from EDC.

  3. 1. Place sugar into mixing bowl and mill 30 sec speed 9.

    2. Add all remaining ingredients and mix 5 sec speed 7.

    3. Separate icing into batches and add colouring as required.

    4. Spoon icing into piping bag and decorate as required.

Tip

If icing dries out add a couple of drops of water to siften up the icing.

    Consistency good, dough easy to work with and the end product is semi chewy. I would decrease the amount of spices though as it leaves a weird taste in the palette.

    Amazing Made this with g/f flour a straight swap with g/f self raising flour dough was easy to handle and my 5 yr old coeliac will be very excited in the morning to see his g/f gingerbread men thanks for sharing a great recipe

    Tried this out on my husband, although my artistic skills leave a lot to be desired with the decorating the gingerbread still tasted great and I will be making it for mr Fussy again tmrc_emoticons.D

    This was a great recipe.  The dough was easy to manage with the kids helping.  Lovely flavour!
