Gluten Free Banana & Choc Chip Muffins

  • 3 ripe bananas
  • 100 g raw sugar
  • 100 g Butter
  • 1 egg
  • 20 g cold milk
  • 1 tsp bicarb soda
  • 1.5 tsp Gluten Free Baking Powder
  • .25 tsp salt
  • 250 g Gluten free plain flour
  • 80 g dark choc chips

Recipe's preparation

    Gluten Free Banana & Choc Chip Muffins
  1. Preheat oven to 190deg C. Grease muffin tins.

    Add butter to bowl. Melt for 2 minutes 100 deg Gentle stir setting"Gentle stir setting" .

    Add all ingredients starting with the bananas. Mix for 10 seconds speed 4.

    Scrape bowl and repeat in 10 second segments until all mixed.

    Pour into greased muffin tins and bake for 15 - 20 minutes or until golden brown and muffins spring back to the touch.

    Remove from pan and cool on wire rack.

    Enjoy!!

    Hello, this has to be hands down the softest most like real tasting muffins I have tried. I also doubled this recipe and it did need some help to mix at the end. I just used the spatula to help mix it. Next time I'll blend the bananas up with the wet ingredients before adding in the flour like you do with banana bread as this will help it mix a bit easier. Thank you so much!

    Muffins turned out really well - very happy and not at all "chewy".

    Instead of 250grams of flour I used the following
    100 grams of roughly chopped almonds
    50 grams of psyllium husk
    100 grams of White Wings Gluten Free SR Flour
    Added a teaspoon of cinnamon and left out the bi-carb sofa

    I made these this afternoon and baked them for 15 minutes. Although they were flavoursome, the texture was very chewy. Not sure what I did wrong.
