Ingredients

Muffin Mixture

  • 3 eggs
  • 3 bananas, ripe
  • 6 tablespoons honey, (or maple syrup)
  • 6 tablespoons Almond milk
  • 1 teaspoon vanilla essence
  • 2 tablespoons baking powder
  • 200 grams almond meal, Equivalent to 2 cups
  • 100 grams gluten free rolled oats, Equivalent to 1 cup
  • 125 grams cadbury milk chocolate buttons, (can be changed to white or dark chocolate dependant on taste)
  • 12 muffin papers

Recipe's preparation

    Method
  1. Step 1. Preheat fan forced oven to 180 degrees Celsius

  2. Step 2. Place muffin papers into muffin or cupcake tray 

  3. Step 3. Place remaining ingredients into your Thermomix mixing bowl. Mix 15 sec/speed 6

  4. Step 4. Evenly dispence muffin mixture by pouring mixture into muffin papers prepared earlier

  5. Step 5. Cook in fan forced oven for 30 minutes or until golden brown.  Use a wooden skewer to test if cooked. Cooked when skewer comes out clean.

  6. Step 6. ENJOY!! Smile

Tip

To re-heat place individual muffins in microwave for 20 seconds

    OAT alternative?

    Hi Peta, just wondering if you could suggest a grain that could be used as an alterntive to oats in this recipe? chia maybe?

    There is no such thing as gluten free rolled oats. For those of us with Coeliac disease, we have to avoid oats including contaminated oats. There is a small percentage of Coeliacs who can tolerate the gluten in oats but they first have to have biopsies of the small intestine. Then do an oat challenge and then have repeat biopsies done to see if the oats caused inflammation in the small intestine. So please call these low gluten and not gluten free. Thanks

    Delicious!! My kids gobble these up (as does hubby). So quick & easy to make & super tasty. Although I find when I make it the recipe makes closer to 30 decent size muffin sizes tmrc_emoticons.)
