Ingredients

For the Cake

  • 300 grams Whole Cumquats
  • 600 grams water
  • 6 eggs
  • 250 grams raw sugar
  • 200 grams whole almonds
  • 100 grams dark chocolate
  • 100 grams chia seed
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate soda

For the Icing

  • 150 grams raw sugar
  • 20 grams Pure Corn Flour
  • 20 grams cocoa
  • 1 teaspoon Citrus Zest, Orange, Lime or Lemon
  • 1/2 teaspoon Citrus Essence, Orange, Lime or Lemon
  • 40 grams Milk

Recipe's preparation

    Cake
  1. 1. Pour water into the bowl. 

    2. Place Cumquats into Steamer Basket, lock the liD into place.

    3. Steam 30 mins/varoma/speed 1.

    4. Remove Steamer Basket - set aside to cool Cumquats and empty water out. 

    5. Dry bowl thoroughly. Preheat oven to 160 degrees Celcius. Grease and line 23cm spring form cake tin.

    6. Add sugar to bowl. Mill 30 secs/speed 10. Reserve to a bowl. 

    7. Add almonds to bowl. Mill 10 secs/speed 10. Add to sugar bowl. 

    8. Break chocolate into bowl. Mill 10 secs/speed 7. Add to sugar/almond bowl (don't worry about the little bit of melted chocolate on the bottom of the bowl).

    9. Place the cooled Cumquats whole into the bowl. Pulp 30 secs/speed 8. Scrape down bowl.

    10. Add eggs. Mix 5 seconds/speed 5.

    11. Add sugar, almonds, chocolate, baking powder and bi carb. Mix 10 secs/speed 4.

    12. Add chia seeds. Mix Counter-clockwise operation"Counter-clockwise operation" 5 secs/speed 3. If anything is not mixed through properly, fold through with your spatula.

    13. Pour into tin, and bake 1 hr 20 mins, or until a bamboo skewer comes out clean.

    14. Allow to cool in tin for 10 minutes. Remove springform and leave base on a wire rack Until completely cool.

  2. Icing
  3. 1. Ensure your bowl is clean and dry.

    2. Mill your zest for 10 secs/speed 10. Scrape down bowl.

    3. Add sugar and mill for 30 secs/speed 10.

    4. Add all other dry ingredients and mix 10secs/speed 7.

    5. Add essence and milk and mix 20 secs/speed 5.

    6. Por immediately over cooled cake.

    Made this today and it came out perfect I halved the sugar and used plain flour. Tastes lovely.

    Lovely cake.

    I only used 150 gm sugar and was plenty for us. I didn't ice either but my daughter thought it would be nice with a cream cheese icing.

    As I was given buckets of cumquats I have steamed 600 gm and then divided into 2 lots and frozen them so I can make again quickly.

    The first time I made this I wasn't sure about it but the others declared it was great and my Pa-in-Law voted it 9/10! I made it again to take to a friends place and it turned out even better, so now I love it and will continue to make it for GF and low-carb guests - as long as I can find cumquats! The second time I extracted the pips after steaming and was happier with it, though a slightly messy and fiddle process. I can't comment on the icing as I haven't done it but very grateful to Pinklady for this recipe.

    A lovely cake and a perfect recipe to use up some of our cumquats!  I have made this cake twice now, but not iced it either time (my family are not fans of icing). The first time, I served it warm for dessert with berries and cream and the second time I added less sugar (200 g) and dusted it with icing sugar. It was delicious on both ocassions, thank you for the recipe.  tmrc_emoticons.)
