Ingredients

Gluten Free Dairy Free Double Chocolate Muffins

  • 260 g Gluten free plain flour
  • 1 tsp Gluten Free Baking Powder
  • 30 g cocoa powder
  • 130 g sugar
  • 140 g Grapeseed Oil
  • 2 eggs
  • 200 g soy milk / almond milk / rice milk
  • 1 tsp vanilla extract
  • 60 g dark chocolate chips or pieces, (dairy free)

Dairy Free Chocolate Icing

  • 100 g icing sugar
  • 2 tablespoons cold pressed coconut oil
  • 1 tablespoon cocoa powder
  • soy milk / almond milk / rice milk
  • dark chocolate, (dairy free) to decorate

Recipe's preparation

    Gluten Free Dairy Free Double Chocolate Muffins
  1. Preheat oven to 160˚C.  Grease or line a 12 cup muffin tray and set aside.

  2. Place flour, baking powder, cocoa and sugar into mixing bowl and mix 5 sec/speed 5.  Set aside. 

  3. Add oil, eggs, milk and vanilla and mix 10 sec/speed 4.

  4. Add reserved flour mixture and mix 10 sec/speed 4. Scrape down the sides of mixing bowl with spatula.

  5. Add chocolate and mix 5 sec / Counter-clockwise operation"Counter-clockwise operation" / speed 3.

  6. Spoon mixture into prepared tray and bake for 15-20 minutes or until a skewer comes out clean.

  7. Dairy Free Chocolate Icing
  8. Place icing sugar and cocoa into mixing bowl and mix 5 sec/speed 5.

  9. Add coconut oil and mix 5 sec/speed 6, or until thoroughly combined.

  10. With blades running on speed 3, add a few drops at a time of milk through the hole in the lid until an icing consistency is achieved. Ice muffins and decorate with grated chocolate.

    These are the BEST muffins I have ever made. I replaced the choc chips with cacao nibs. Absolutely delicious! Very impressed! This will be my staple choc muffin recipe forever!! No-one even knew they were gluten and dairy free!
