Ingredients

Dough ingredients

  • 210 g Cashews and/or Almonds, Preferably activated
  • 30g g chia seeds, (Optional), can also use linseeds or combination of both
  • 2 very ripe Banana
  • 1 mango, (approximately 300g mango and banana)
  • 3 eggs, Organic free range
  • 1 teaspoon vanilla extract
  • 35 g coconut oil, Plus extra for the pan (or macadamia nut oil or melted butter)

  • 1/2 teaspoon baking soda / bi-carb soda
  • 1 tablespoons lemon juice, (or apple cider vinegar)
  • 1 pinch salt, (Celtic or Himalayan)
  • 50-70 g dark chocolate chips, (Optional)
  • sesame seeds, (Optional)

Recipe's preparation

  1. Preheat oven to 160 C.


  2. Grease a loaf tin and set aside.

     
  3. Place cashews and/or almonds, and chia seeds in Thermomix and grind 6 seconds speed 9.

     
  4. 4. Add the rest of the ingredients except the chocolate chips and mix for 30 seconds on speed 5-6.

     
  5. Add the chocolate chips (if any) and mix through with the spatula.

     
  6. Pour the batter in the tin and bake for 45-50 minutes or until a fork or skewer comes out clean (except for the melted chocolate!).

     
  7. Wait for the cake to cool in the tin (or for at least 10-15 minutes if you're in a rush!) before taking it out.

     

Tip

This nutritous grain free/gluten free bread(or cake) is moist, spongy and deliscious. It's low GI and very filling.  It should last in the fridge for about a week although it hasn't lasted more than 2 days in our home

.

- Substitute mango and banana with strawberries, oranges, or pears to make up 300g.

 

- Add 50g coconut sugar, or rapadura sugar or honey to sweeten it lightly.

 

- Substitute chocolate chips with fresh/frozen blueberries, chopped dates, sultanas, currants, other dried fruit, or leave it out.
