Ingredients

For the base

  • 115 grams coconut oil or butter, chilled
  • 185 grams ground almonds
  • 75 grams rice flour
  • 75 grams Raw Honey
  • 1 free range egg

For the topping

  • 110 grams lemon juice
  • 30 grams rice flour
  • 4 free range eggs
  • 75 grams Raw Honey
  • 170 grams raspberries, fresh or frozen

Recipe's preparation

    For the base
  1. Put all base ingredients in Closed lid"Closed lid" and mix 10 sec Sp 4 

    Press base ingredients into a 20x25cm slice tin lined with baking paper

    Prick with a fork 5 - 6 times

    Bake in oven @ 180C for 15-20 minutes, or until golden on top

    Remove from oven and leave to cool slightly while you prepare the topping ingredients

    Lower heat to 160C

  2. For the topping
  3. Add all the topping ingredients except the raspberries to the Closed lid"Closed lid"    20 sec Sp 4 

    Carefully pour the topping onto the cooled base

    Arrange the rasperries on top, then bake for 30 minutes or until the topping is cooked all the way through

    Will keep for 3 -4 days in the fridge

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Might have put too much coconut oil in, but the base was a sticky consistency. Still cooked ok. Just cooking the top now. Will post again.
