Ingredients

Base Ingredients

  • 225 g plain flour
  • 80 g icing sugar
  • 180 g cold unsalted butter
  • 1 lemon, Zest
  • 1/2 teaspoon vanilla extract
  • 2 teaspoon iced water

Lemon Topping

  • 6 eggs, Large
  • 600 g caster sugar
  • 3 lemons, Zest
  • 250ml fresh lemon juice, Strained
  • 65 g plain flour

Recipe's preparation

    BASE
  1. Preheat oven to 180 degrees

    Butter and line a 32cm x 24cm x 5cm tin

    Add flour, icing sugar and lemon zest to TM Bowl. Mix on Speed 5 for 10 seconds

    Add butter and mix on reverse speed 4 for 1 minute

    Add vanilla essence and iced water and mix on reverse speed 4 for 1 minute

    Press biscuit base into tin - ensure base is pressed into the corners

    Bake at 180 degrees for 15-20 minutes, until base is slightly golden and dried

  2. LEMON TOPPING
  3. Add eggs, sugar, lemon zest and juice to TM bowl

    Mix on speed 5 for 20 seconds

    Sift flour into TM bowl and mix on speed 5 for 30 seconds

  4. Drop the oven temperature to 150 degrees

    Once base is slightly cool - pour topping over base and bake in the oven for 35-45 minutes, or until the topping has set

    Remove from oven and let cool on a wire rack

    ENJOY!

    Wow! This slice is amazingly delicious. I loved the idea of having gooey lemon and then was pleasantly surprised by the crispy top. This may well have replaced lemon meringue pie as my favourite dessert!
