Recipe's preparation

    Before you start
  1. Make a Batch of Quick Puff pastry from Basic Cook Book,
    Also have on hand a jar of your favourite home made jam,
    if you are new to Jam making use the recipe from the Basic Cook book its very easy. Traditionaly you use raspberry jam but use what you like and have on hand.
  2. Method
    Turn oven onto 200 deg

    Roll out puff pastry on Thermomat this will be nearly the size of the whole mat, use a large cutter or glass to cut the pastry the size of your standed muffin tin about 11cm across you need 12,
    dont disguard cut offs yet .
    Lightly grease muffin tins and line each one with the pastry,add your jam 1 tsp into the center of each one put in fridge while making sponge.

    Sponge
    Put butter,sugar in Closed lid"Closed lid" 10 sec speed 4 scrape down sides and repeat, put in butterfly whisk mix 30 speed 3.5 add eggs one at a time through MC lid hole while mixing, mix well between each egg.Remove Butterfly whisk scrape sides down and add flour and baking powder mix onDough mode"Dough mode" 20sec till just combined

    Place a large spoonful in each muffin tray making sure the jam is totally covered
    Cut 12 strips of off cut pastry and add to the top of sponge in your own design
    Bake 200 deg 20 mins
