Grandma's Almond Biscotti

  • 100 grams natural almonds
  • 60 grams caster sugar
  • 200 grams unsalted butter
  • 1/2 level teaspoons vanilla extract
  • 250 grams plain flour
  • 100 grams icing sugar, for dusting

Recipe's preparation

  1. Add 80grams natural almonds to mixing bowl

    Mill 30 seconds/speed 9
  2. Add remaining 20grams natural almonds

    Chop 20 seconds/speed 7
  3. Transfer almond meal into a bowl and set aside
  4. Add caster sugar, butter and vanilla extra to mixing bowl

    Cream for 3 minutes/ 90 degrees/ speed 3
  5. Add plain flour and almond meal

    Mix for 30 seconds/ reverse Counter-clockwise operation"Counter-clockwise operation" /speed 3
  6. Scrape down sides of mixing bowl

    Mix again for 15 seconds/reverse Counter-clockwise operation"Counter-clockwise operation" /speed 3
  7. Preheat oven to 180 degrees
  8. Shape biscuits as desired and lay on lined baking tray, allowing ample room for them to grow slightly
  9. Bake in fan forced oven for 10-15 minutes, removing when slightly browned

Tip

Remove from over as soon as slightly browned as it will keep biscuits light and soft
