Ingredients
Biscuit Dough
- 45 g Butter, soft
- 330 g sugar
- 260 g honey
- 1 level teaspoon bi-carb of soda
- 1 tablespoon Boiling water
- 2 eggs
- 1 teaspoon vanilla
- 570 g plain flour
- 1/4 teaspoon salt
- 70 g arrowroot flour

I'm cooking this todayRecipe's preparation
Place sugar in TM bowl and pulverise for 3 sec sp 9.
Add butter and honey to the sugar and cook 3 mins 90c sp1.
Aerate this mixture by mixing 1 min sp 4 using the butterfly.
Mix bi-carb of soda and boiling water together to disolve. Add to butter, sugar honey mixture. Next add eggs and vanilla mix on sp 3.
Add plain flour , salt and arrowroot and mix sp 3. Mixture will come together like a dough. If you can't make balls with the mixture add a little more flour.
Preheat oven 180 c fan forced . Rinse baking trays with water then place baking paper on wet tray. This holds the baking paper in place and the biscuits will stick to the baking paper allowing you to move the baking paper and biscuits together after they are baked. Very handy for getting them ready to ice. Using your TM bread mat sprinkle some plain flour on the mat and place a quanity of the dough on the mat. Lightly handle dough by pulling off some dough about the size of 2 teaspoons roll in a log and place on prepared trays. with the back of your finger gently push the dough a little to flatten it a bit.
Bake for 10-12 mins
101((10 for soft and chewy, 12 for hard biscuits) until a light gold colour. Leave to cool on tray for 10 mins then transfer the baking paper with biscuits atted to a cooling rack.

Biscuit Icing
2 cups icing sugar (mill raw sugar optional)
1 ½ tab butter
Add butter and icing sugar and beat 20sec sp 5.
Needs to be a spreadable consistency to ice the cooled biscuits.
Colour and flavor with strawberry sauce or jam, or vanilla.
