Ingredients

Hard Timer biscuits

  • 180 g raw sugar
  • 400 g plain flour
  • 125 g Butter, or margarine
  • 3 tsp mixed spice
  • 1 pinches salt
  • 100 g currant, or sultanas or mixed fruit
  • 1 tbsp honey
  • 1 egg
  • 60 g Milk

Recipe's preparation

  1. Weigh sugar into the TM bowl, place MC in the lid and mill for 5 sec on speed 8.
  2. Weigh in plain flour, butter, spice and salt. Combine for 10 seconds on speed 5. The mixture should resemble fine breadcrumbs. Scrape down the sides with the spatula.
  3. Weigh in the ftuit, honey, eggs and milk. Combine for 20 seconds on reverse speed 1.5. Scrape down the sides with the spatula and combine for a further 20 seconds on reverse speed 3.
  4. Remove dough from the bowl onto a thermomat, or other floured surface. Roll out until about 5mm thick taking care not to overwork the dough.
  5. Cut into biscuits and place of a baking sheet. Bake in a preheated 180 degree oven for 12 minutes until just golden.
  6. Remove to a wire rack to cool.

Tip

If you prefer free-form biscuits, at step 4, simply roll dough into walnut sized balls and place on a baking sheet. Flaten slightly with a fork. Then bake as per step 5.

These biscuits have been a favourite in our family for many years. They were often baked, along with Anzac's and Gingernuts in batches that yielded 8-10 dozen! It was rare to open the pantry and not have a jar full.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
