Ingredients

Healthy Banana bread

  • 100 g date
  • 5 ripe bananas
  • 70 g Thermomix butter unsalted, premade
  • 70 g sugar
  • 2 eggs
  • 240 g plain flour
  • Pinch sea salt
  • 1 tsp bicarbonate soda
  • 110 g buttermilk
  • 2 tsp Vanilla Paste
  • 1 ⅟₂ tsp Baking Power
  • 120 g Walnut
  • 30 g popiseeds

Recipe's preparation

  1. Preheat the oven to 180°C . place baking paper in your loaf tin and set aside.

    Place date into mixing bowl and chop 3 sec/speed 5 and set aside.

    Place bananas into mixing bowl and mash 5 sec/ speed 6.

    Add butter and sugar and eggs and mix 20 sec/ speed 4.

    Add flour ,baking powder , salt, bicarbonate soda, vanilla paste and buttermilk and combine 20 sec/speed 4

    Add walnut and popiseeds and mix 3-4 sec/speed 4.

    pour into prepared loaf tin and bake for 60 minutes or until inseted skewer comes out clean.

    Allow to cool before serving.

    Love this banana bread! The only recipe I use now. I use a few more dates (around 150g), leave out the sugar & use regular milk delicious!!  tmrc_emoticons.)

    Great recipe thankyou.

    I chopped the walnuts first and then the dates, as I like them both a little finer, then put aside.  I only added 50g sugar as we think it's sweet enough with the bananas and dates, and I added chia seeds instead of poppy.  It's a winner at our house, thankyou Big Smile

    I split this into two loaf tins which meant i didn't need to cook it for 60min. I also swapped out the walnuts for almonds. Was very tasty tmrc_emoticons.)

    I have been cooking this for over 1 and 1/2 hours and it it still not cooked on the inside. The top is getting very dark. Not sure how much longer I can cook it.

    Disappointing because it was looking great while it was in the oven. Took it out and it completely sank in the middle.

    Delicious recipe, lovely texture for banana bread. Would be easier to follow recipe if ingredients were listed in order, and dates were in the recipe (I nearly forgot to add them back in)

    This was good.  I had to substitute the walnuts with raisins but it made it too sweet.  Next time I'm just going to amke it without the walnuts. Thanks for sharing.
