Ingredients

Heidi's German Butterkuchen (Buttercake)

  • 120 g unsalted butter
  • 125 g Milk
  • 125 g water
  • 1 level tbsp dried instant yeast
  • 100 g sugar
  • 600 g Baker's Flour
  • 2 eggs
  • 2 level teaspoons bread improver
  • 1 tsp brewing sugar, optional
  • 1 tsp salt

Cinnamon/butter crumble

  • 120 g Butter, cold, chopped
  • 180 g sugar
  • 1/2 tsp ground cinnamon
  • dash vanilla

Recipe's preparation

    How to:
  1. *Grease/line a large lamington size pan.*

    Base:

    1. Melt the butter 3m/60°C/sp2

    2. Add the remaining ingredients in the order listed and blend slowly to sp7 for 20-30sec, or until roughly combined.

    3. Knead Dough mode"Dough mode" 5mins

    4. Press evenly into the prepared pan.

    5. Cover loosely and place in a warm position to prove until double, around 45mins.
    Preheat the oven to 180°C during this time.

    6. Crumble the topping (in clumps) evenly over the base.

    7. Place the pan on a large tray in case the butter melts and leaks too much.

    8. Bake for app. 35-40mins or until cooked when tested.

    Crumble topping:

    Place the butter, white sugar and cinnamon in the Closed lid"Closed lid" and blend 20secs/sp4, until clumps form.
    This can be done ahead of time. Place the mixture in a bowl in the fridge until you are ready to use.

Tip

Crunchy crumbly cinnamon topping, over a fluufy sweet style bread..
and..Oh my goodness..the aroma wafting from the kitchen while baking is devine. Memories of my childhood.

It freezes well.

This makes a large cake.
*The tray I used measures 35cm x 24cm. and it filled it completely.*

    Smile Thank you for your recipe. I made it this afternoon for supper, my family loved it!
    Just made a few changes, cut back on the sugar in the cake dough mix and made only half mixture for the topping n added handful of oats.
