Ingredients

Rock Cakes

  • 60 g Dates pitted
  • 40 g Cranberries
  • 300 g Self Raising Flour
  • 100 g Butter, Roughly chopped
  • 1/2 tsp allspice, ground
  • 100 g Caster Sugar (or milled from raw)
  • 1 egg
  • 5 g vanilla essence
  • 90 g Milk
  • Caster Sugar - extra

Recipe's preparation

    Rock Cakes
  1. 1. Preheat oven to 170*-180*C.

    Place whole dates into TM bowl, chop 5sec/speed 7. Add cranberries chop 5sec/speed 7. Set aside.

    2. Place flour, butter, caster sugar & allspice into TM bowl, mix 10sec/speed 4.

    3. Add dates & cranberries, egg, vanilla essence and milk, mix 10sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4.

    4. Drop 2 tablespoons of mixture, about 5cm apart, onto tray lined with baking paper. Sprinkle extra caster sugar on top.

     

    5. Bake 15min or until lightly browned. Cool on trays.

     

Tip

Replace dates and cranberries with sultanas for a traditional rock cake recipe.

If you wish to add lemon zest, mill the zest at the very beginning 10 sec/speed 9, leave in while chopping dates & cranberrries.

    I really love these. I've made them a few times with cranberries and dates and another time with sultanas. Yum! I also sub the all spice for mixed spice.

    Great to have something that's not a muffin. So good.

    Lovely recipe. I used dried mixed fruit and spelt flour. I also cooked mine at 160 fan. So nice with a cup of coffee. Thanks for sharingCooking 7

    Great recipe and really easy. Thanks for sharing. I doubled the quantity for a class treat. I must say I only used 1 table spoon of mixture per cookie though and they looked about the size you posted in yours. and I got the right number of servies. Thanks again.

    Glad you enjoyed with sultanas, that's actually the original recipe I have had for 30 years, I just thought I would adapt it with the dates & cranberries as they can be chopped so easily in the Thermomix.     Thanks so much for the rating, glad you liked them.

    I think they would freeze okay, perhaps wrap them individually first so they dont get stuck together and become difficult to separate, then that way they wil be easy to just grab from the freezer ready to go straight into the lunch box.

    Your kids might enjoy my beef & veg bolognese recipe, that's if they like slightly chunky veggies in food. I'm afraid my kids ate everything (no choice..hehe) so they liked this recipe.

    Yummo!! I added the lemon zest and it really enhanced the flavour! Just wondering if these would go ok being frozen? I'm thinking of making a few batches for school lunches
