Hunters muesli cookies
- 4 tablespoons LSA, (Linseed, sunflower seed and almond meal)
- 2 tablespoons water
- 60 g walnuts
- 50 g pepitas
- 50 g dried apricots
- 80 g Dried Dates
- 50 g dried cranberries
- 120 g Butter
- 60 g brown sugar
- 1 egg
- 1 tablespoons vanilla
- 150 g wholemeal flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 150 g oats

- 1. In a small bowl, mix LSA and water together, set aside.
2. Preheat oven to 180*C and line 2 baking trays with baking paper.
3. Place walnuts and pepitas in TM bowl, chop 2sec/sp 5. Check to see if chopped enough, if so, set aside.
4. Place apricots and dates into TM bowl. Chop 3sec/sp 7. Add cranberries, chop 2sec/sp 7. If chopped enough, set aside with walnuts.
5. Place butter and sugar in TM bowl. Cream together 1min 30sec/sp 4, scraping down a couple of times while beating. Scrape down at the end.
6. Add egg, vanilla and LSA mix. Mix 20sec/sp 5, scrape down, mix 20sec/sp 5, scrape down.
7. Add flour, baking powder, cinnamon and salt. Beat 15sec/sp 5, scrape down, beat 15sec/sp 5, scrape down.
8. Add oats and walnut, pepita and fruit mix. Mix together 40sec/"Counter-clockwise operation" /sp 2.
9. Place mixture into a medium sized bowl. Using a small ice ream scoop, scoop 16 nice round cookie piles. No need to flatten, leave them in a half round shape.
10. Bake for 15 min, turning around once during baking. Cool on the trays.

Tip
You can also add choc chips (approx 100g) for a sweeter cookie, or even substitute some of the fruit with choc chips.
