Macaroons
- 150 g Glace Fruit, I use a variety of apricot, pear, pineapple, mango red and green cherries.
- 80 g raw sugar
- 30 g pistachios
- 3 egg whites
- 60 g Shredded coconut

Line a tray with baking paper. Place fruit on a baking tray, make sure the fruit is flat and not overlapping.
Place in freezer for 40 minutes.
Preheat oven 150˚C.
Line 1, 12-hole patty pan tray with paper patty pans.
Meanwhile, place sugar in bowl and mill 10 second/ speed 10. Set aside.
Place pistachios in bowl and pulse (turbo) 5 times, or until they are your prefered size.
Once the fruit is done, quarter the larger pieces of fruit (pineapple, apricot, pear). Add each peice of fruit to the bowl (one at a time) Start with the lightest coloured fruit. Pulse 3-4 times until you have little pieces. Set aside and repeat with all fruits.
Wash and dry bowl thouroughly.
Insert Butterfly.
add egg whites and whisk for 1 minute 30 seconds/ speed 4.
With blades still turning, speed 3, gradually add sugar.
Fold in coconut and pistachios, Speed 2 / 5 seconds.
Remove butterfly. Add fruit, "Counter-clockwise operation" Speed 2, 5-10 seconds.
Divide mixture between patty pans. Bake for 20 minutes; cool macroons in pans.

Tip
You can reserve a small portion of your fruit, coconut and pistachios to sprinkle over your macroons halfway through baking.
