Ingredients

Base

  • 350 - 450 g Fruit cake

Cheesecake

  • 220 g raw sugar
  • 750 g cream cheese
  • 300 g sour cream
  • 1/2 teaspoon Vanilla Bean Paste
  • 60 g brandy
  • 1/2 teaspoon ground nutmeg
  • 3 eggs

Topping

  • 300 g cream
  • Seasonal Fruits

Recipe's preparation

    Base
  1. Preheat Oven 180˚

    Line base of 22cm spring formtin with baking paper

    Cover base of tin with slices of fruit cake, bake for 10 mins or until browned lightly.

    Reduce oven to 150˚

  2. Cheescake
  3. Add sugar, mix speed 7/ 3 seconds

    Add cream cheese, sour cream, vanilla bean paste, brandy and nutmeg. Mix speed 4-5/ 30 seconds, adding one egg at a time, through top of lid.

    Pour mixure in tin.

    Bake Cheesecake for 45 minutes or until just set.

    Cool cheesecake in oven with door ajar. Cover and refridgerate over night.

  4. Topping
  5. Remove cheesecake from tin.

    Place butterfly in bowl, add cream. Beat on speed 4/ 20 seconds

    Cover cheese cake with cream and top with fruit of your choice.

    Refridgerate until ready to eat.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
